I love fruit.  Apples, oranges, melon...you name it, I'll eat it.  But every once in a while, fruit gets boring.  Meh.
I don't suppose chocolate covered fruit is healthy?

This recipe was from somewhere out there, in Pin-landia.  Of course, I can't remember where it was from, and I didn't pin it.  And now I can't find it.  So here's my best attempt at this Vegan Fruit sauce with coconut!

Ingredients:
1 cup cashews or almonds, soaked in water for one hour
1 cup water, almond milk, or whatever liquid you desire.
1/2 cup strawberries (fresh or frozen)

After soaking nuts, rinse well and pat dry.  Using your blender, blend nuts and water together.  Add strawberries and pulse til combined.  Use more liquid if needed, or until you find a consistency you like.

I like to pour a few tablespoons over a mix of grapes, apples and oranges!  For an added treat, sprinkle a teaspoon of unsweetened coconut over the top!  You can also use it as a yogurt topping, or even with oatmeal!
